Darcy’s Story

Darcy Amey first came to live in supported group living services with ResCare Terre Haute in 2015, following a series of behavioral episodes that included physical and verbal aggression, property destruction, and non-compliance, as well as numerous inpatient behavioral health stays. Her behaviors prohibited her from being able to continue to live in the family home any longer, and she was in need of 24-hour support services.
Darcy is often not overly social with peers and staff. Over time, staff noticed she had great interest in culinary arts and used this to help her become more involved. They encouraged Darcy to further engage with staff, peers, and community activities through her love for researching, discovering, and preparing new recipes. During her time living in ResCare residential services, Darcy has used the local library, computer time at day program, and her tablet to forage for new recipes that piqued her interest.
In February 2025, Darcy transitioned to Waiver services to continue working toward building her independence. In July, she showcased her culinary talents in the Vigo County Fair in cooperation with 4-H. Staff Hailey Agresta jumped on board to assist. After much research, Darcy found the perfect recipe: Oreo chocolate chip cookies! With her entry, Darcy won the purple champion ribbon, which is the highest level one can be awarded through 4-H! ResCare Terre Haute is proud to have amazing staff like Hailey and the opportunity to support Darcy and her continued growth toward her hopes and dreams.
Darcy would like to share her recipe so that everyone can enjoy the amazing cookies.
Darcy’s Oreo Chocolate Chip Cookies
- 6 oz Baker’s German sweet chocolate bar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/4 cups brown sugar
- 1/4 cup chocolate chips
- 1 tsp cinnamon
- 2 1/4 cups flour
- 1 tsp salt
- 2 tsp vanilla
- 1/2 cup white chocolate chips
- 3/4 cup white sugar
- 1 cup butter
- 2 eggs
Combine and bake at 350 for 10 to 12 minutes!
